Patron saints

I'm not Roman Catholic but I would like to be. I'm a lawyer and I saw where my profession's patron saint was St. Thomas More. I think there are others. In addition to prayer to God, I've been praying to this saint, and I feel good about it. My question is: When there are more than one patron saint, how do you know which one to pray to?
